Low-Carb / Keto Waffles

I try to make something special for breakfast on Sundays and I have been trying to limit my carb consumption, so I decided to try a recipe for Low-Carb / Keto Waffles (no sugar, no grain flour – link to recipe) I found on another blog – Ditchthecarbs.com.

The recipe was not difficult, but the extra step of whipping the egg whites takes a bit extra time and a few more items to wash. All in all, the waffles were delish and the recipe is a keeper! The texture was good (I like them extra crispy, so I toasted them in the toaster oven after they came out of the waffle maker). I had mine with turkey bacon and a creamy cheese wedge to keep it low-carb.

My waffle maker makes 4 squares at a time and I got 8 from the recipe, 2 per serving (although hubby had 3). I froze the 3 we had left to have another day. Will definitely make these again, but given the steps and dishes, will probably double the recipe next time and freeze the extras. When ready to eat, just pop in the toaster and serve!
