Easy Tostadas

Mexican food is one of our favourites, and we try to incorporate some easy dishes like nachostacos and tostadas often into our meal rotation. While tacos can be made with soft or crunchy shells made with corn flour and/or wheat flour, tostada shells are always crunchy and corn-based. Both of these dishes have a seemingly endless number of possible toppings, so it’s easy to customize for dietary restrictions and personal preferences. We also love that they are a great “build your own” option for family meals and fun for entertaining as well.

I’ve shared posts on nachos and tacos before, and here’s my take on the tostadas. These are gluten-free (check the label on the ingredients to make sure) and vegetarian, but can easily be made vegan (by swapping the cheese and mayo in the coleslaw), or cater to meat-eaters by including other protein options (e.g. chicken, beef, fish, shrimp, etc.). I’ve even made breakfast tostadas with beans, scrambled eggs, cheese and salsa – it was delish!

My suggestion is to set-up a “Tostada Bar” and get the fiesta started!

Here are some suggestions for the layers. We love the ability to mix and match, or change it up with other favourite toppings or whatever is in the fridge! This can be a fun snack, appetizer, entertaining food or light meal.

Easy Tostadas

  • Tostada shells (plain or chipotle flavour, we find them at the grocery store ~ heat as per package instructions)
  • Refried beans (store bought – a great shortcut! – warm up before serving)
  • Veggie ground (or other protein, cooked and seasoned to taste)
  • Shredded cheese
  • Salsa
  • Coleslaw or shredded lettuce
  • Guacamole
  • Chopped fresh cilantro

Layer toppings on the shell and enjoy!
